Ingredients: 2 pieces of wild caught cod
3 small potatoes, peeled and chopped into 1" pieces
1 stalk celery, washed and chopped
1/2 medium onion, chopped
1/4 bunch parsley, washed and chopped
4 cups low sodium chicken stock
1/2 cup heavy cream
kosher salt, freshly ground pepper to taste
Method: Bring stock to a low boil. Add veggies and simmer until potatoes and celery are tender.
Add parsley.
Cut fish into 1" pieces. Reduce heat to low and add fish. Simmer 3 minutes.
